Soups are an ideal lunch for a busy day, or a great option for a light dinner. It’s surprising just how much they can fill you up. I always used to think I’d be left hungry if I chose to make some soup, however, you can make a satisfying recipe if you just choose the right ingredients. With this dish, I used a sweet potato so that the recipe would provide you with a source of carbohydrates, as well as a subtly sweet flavour. However, to boost the sweetness slightly more, I also used a carrot. I love the pairing of those two vegetables together! In terms of flavour, nothing beats spicy food in my household, so I added some of my favourite spices; cinnamon, cayenne and paprika. This gave the soup a nice balance between hot and sweet. You can use as much cayenne pepper as you like, depending on how hot you like your food. Either way, I hope you like this recipe!
spicy carrot & sweet potato soup
serves about 3-4
1 sweet potato (275g)
1 carrot (100g)
5 cups 1l 250ml water
1 onion (150g)
2 garlic cloves
1 2cm chunk ginger
1 tbsp cumin seeds – if you don’t have this, you can use ground cumin
2 tsp smoked paprika
1 tsp cinnamon
a pinch – 1/4 tsp cayenne
1 tbsp vegetable stock powder
1. Peel the carrot and sweet potato, then chop into small bitesized pieces. Add them into a pan on a medium-high heat with the 5 cups of water. Allow to boil and cook until completely soft for about 15-20 minutes.
2. In the meantime, slice the onion, and add into a pan on a medium heat with a drizzle of oil. Fry for about 4 or so minutes, until golden. Then add in the cumin, crushed garlic, and grate in the ginger. Fry for another minute. Then add in the paprika, cayenne and cinnamon. Stir and fry for a final minute.
3. After this, pour the onion mixture into the pan with the sweet potato and carrot. Then, scoop in the vegetable stock and add salt and pepper to taste. Stir and then leave to cook until the potato and carrot have softened.
4. When this is done, either blend using a hand blender, or remove the mixture from the heat then pour into a blender, and blend until smooth. Finally, pour the soup into bowls and serve.
