
rose and pistachio energy bites
Hi Everyone! I hope you’re having a wonderful Summer so far. I’ve certainly been enjoying the sweet spell of London sunshine we’ve had in the UK. This week I wanted to share a delicious new recipe I’ve been working on which is perfect for enjoying out in the garden with a refreshing iced tea.
I partnered up with East End Foods to deliver you this recipe, and it features their Rose Water, Cinnamon, Ginger and Pistachios to create a delicate but decadent sweet treat. I always use ingredients from East End Foods as their products are the highest quality available and are sold at such a great, affordable price point.
These energy bites are really quick and simple to make – all they require is a strong blender or food processor (I use an Optimum G2.1 Froothie Blender) to break down the ingredients into the perfect smooth, squishy consistency to be pressed into a ball shape. Summertime is just one of those months where I want to be out in the sun as much as possible – so quick, easy recipes are always essential. I hope you enjoy these!
rose + pistachio energy bites
makes 24
ingredients
1 cup (150g) East End pistachios
1 cup (150g) ground almonds
1 1/2 cup (250g) pitted dates
2 tbsp dried rose petals
1 tsp East End ground cinnamon
1/2 tsp East End ground ginger
2 tbsp East End rose water
method
- Add all the ingredients into a high powered blender/food processor. I use an Optimum G2.1 Froothie Blender.
- Blitz all of the ingredients until they have completely broken down and formed a smooth, slightly sticky consistency.
- Then, remove the mixture from your machine and roll the mix into about 24 evenly sized ball shaped bites.
- Once this is done, move the bites into the fridge or into a container in a cool space to keep between eating. They last about 3-4 days.
Rose and pistachio is such a gorgeous flavour combination and these look delicious. I haven’t made energy bites in absolutely ages and now you’ve inspired me.
