Mango & Walnut Energy Bites
makes about 18 small bites
Ingredients
150g dried mango
100g dried unsulphured apricots
150g walnuts
2 tsp hemp protein powder
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp orange zest
pinch salt
Method
Add the mango, apricots, walnuts, protein powder, vanilla, cinnamon, orange zest and salt into a high powered food processor. Blend all of the ingredients together for a few minutes, until they have broken down and formed a sticky crumb.
When this is done, take a scoop of the mixture and press it into a ball shape, then sit it aside onto a plate. Repeat this process until all of the mixture has been used up.
Then, serve or store in the fridge or airtight container.
