DIY Coconut Rainbow Sprinkles
makes about 25 servings
Ingredients
2 cups (200g) desiccated coconut – I used Coconut Merchant’s
4 drops liquid stevia (or amount to taste)
1/4 tsp Colouring Food red colouring
1/4 tsp Colouring Food gold colouring
1/4 tsp Colouring Food yellow colouring
1/4 tsp Colouring Food green colouring
1/4 tsp Colouring Food blue colouring
1/4 tsp Colouring Food purple colouring
Method
Firstly, add the desiccated coconut and stevia into a large mixing bowl and mix together.
Then, divide the coconut into 6 by weighing it into sections of about 33-34g each – to be even. When this is done, add 1/4 tsp of one of the food dyes into 1/6th of the coconut. Then, thoroughly mix the dye into the coconut using your hands, so that the colour is spread evenly throughout the coconut. Repeat this step with each of the dyes into 1/6th of the coconut, until complete.
Next, pour each of the different coloured coconut sprinkles into a bowl, and gently stir together using a spoon until all of the colours have mixed together. Then, pour the sprinkles into a large jar, cover it and store it away until ready to use for decoration.
