Apple, Pear & Berry Chia Pudding

Ingredients
for the chia pudding: 4 tbsp chia seeds 1 1/2 cups (375ml) Alpro original unsweetened Almond Milk 1 tbsp maple syrup 1/2 tsp cinnamon 1/4 tsp vanilla powder
1 apple
1 pear
for the compote:
100g blackberries
100g raspberries
1 tsp maple syrup
1 tbsp water
to serve:
raspberries
blackberries
dark chocolate
pistachios
Method
Add the chia seeds, cinnamon, vanilla, maple syrup and almond milk into a mixing bowl. Stir everything together until well mixed. Move the bowls into the fridge for about 2 hours to thicken and gel up. Check and stir the mixture once every 30 minutes or so.
10 minutes before the chia pudding has been in the fridge for 2 hours, make the berry compote. Add the raspberries, blackberries, maple syrup and water into a medium sized pan, and place it onto a medium heat. Stir the mixture together for 10 minutes, pressing the fruit and breaking it down as you stir it. Then, when the sauce has thickened into a compote consistency, remove it from the heat and set it aside to cool.
Next, grate the apple and pear. Then, remove the chia pudding from the fridge, and stir the apple and pear into it until everything is well mixed. Then place it back into the fridge.
When the fruit compote has cooled, prepare the chia puddings. Place 1/4 of the chia pudding into a bowl, followed by 2 tbsp of yogurt, and 1/4 of the berry compote. Then, add another 1/4 of the chia pudding on top, followed by 2 tbsp of yogurt and 1/4 of the fruit compote. When this is done, repeat this process in another bowl to make the second serving.
Lastly, top the bowls with some raspberries, blackberries, pistachios and dark chocolate to serve.
