pineapple, spinach & mint smoothie

Wow, the weather in London has been so hot over the last few days! It feels like we’re finally experiencing a real summer. It’s been so lovely here, and I’ve spent lots of time sat out in the sunshine in the local park near where I live. It’s been the perfect time to just relax and enjoy the season! And, when it’s hot outside, I really love to eat lots of fresh fruits, vegetables and drink lots of homemade smoothies!

My latest smoothie creation was a pineapple, spinach and mint flavour. It has a really delicious, refreshing taste that’s nice and tropical – perfect for celebrating the season. To make the smoothie, I mixed these ingredients with my favourite Alpro Coconut Milk, as it’s really light and has a great coconut flavour. I also added in some spirulina, as it naturally enhanced the green colour of the drink.


It’s such a simple smoothie to make, but it tastes amazing and is surprisingly filling. I definitely think its my new favourite summer drink! I hope you enjoy the recipe!


pineapple, spinach & mint smoothie

serves 2


2 cups (500ml) Alpro Coconut Milk

350g fresh pineapple, roughly chopped

1 medium banana

20g spinach

10g mint leaves

1/4 tsp spirulina



  1. Add the coconut milk, pineapple, banana, spinach, mint and spirulina into a blender – I used my Froothie Optimum 2.1 Blender, and blend until smooth. Then, pour into glasses and serve.
