orange, lime & apricot overnight oats

I love overnight oats. Although it may seem a bit eager to prepare your breakfast the night before eating it, it does save a lot of time in the morning. You then also get to enjoy a bowl of something that’s really delicious. When I make my overnight oats, I like to combine a few flavours that I think really compliment each other. So, with this recipe I went for a citrusy/tropical theme. Mixing orange, lime and dried apricots give a really nice fresh taste, and adding orange zest gives a very light zingy bitterness. The apricots also plump up from the fruits juices giving a sweet, soft texture.

This recipe doesn’t take too long to make, and creates the perfect alternative to your usual weekday breakfast!


orange, lime & apricot overnight oats

serves 3-4


1 1/4 cup (130g) jumbo rolled oats

1 1/2 cup (325ml) milk of choice – I used rice

2 large oranges (425g)

1 lime

1/2 cup (100g) dried apricots



1. Firstly, zest one of the oranges, and add the zest into a large bowl or mixing bowl. Then, juice both oranges and the lime, and add them into the bowl, followed by the milk and oats.

2. Roughly chop your apricots, then add them into the bowl and stir all of the ingredients together. Move the bowl into the fridge and leave overnight.

3. In the morning, remove the overnight oats from the fridge and stir (it may look slightly separated beforehand), then pour into bowls and serve.
