double chocolate whoopie pies

Just when I thought I couldn’t eat any more chocolate today, I had to come up with these. These are the sweetest, richest, best whoopie pies I’ve made to date – and that’s including any traditional ones I’ve made. I honestly don’t think anyone would be able to tell that these were free from gluten, dairy, eggs or refined sugar. I can’t stop eating these. Although they’re simple to make, they would easily impress any guest. I hope you fall in love with these chocolate indulgences as much as I do!

for the cookie:

1/3 cup (80ml) liquid sweetener of choice – I used rice syrup

1/4 cup (40g) coconut butter

2 tbsp almond milk

3 tbsp (20g) cacao powder

3 tbsp (20g) millet flour

3 tbsp (25g) quinoa flour

4 tbsp (40g) buckwheat flour

1 tsp flax seeds

1/2 tsp baking powder

1 tsp cider vinegar

pinch salt, to taste


for the filling:

1 cup (80g) cacao/cocoa powder

4 tbsp liquid sweetener of choice – I used rice syrup

1/2 cup (70g) coconut butter

1/4 cup (60ml) almond milk

1/4 tsp truvia

vanilla, to taste

pinch salt




1. Firstly, add the coconut butter, almond milk, flax seeds, and sweetener into a blender. Blend together until the coconut butter has broken down and all has combined – don’t worry this will look a bit separated!

2. Now add in the cacao/cocoa powder, flours, baking powder, cider vinegar and a pinch of salt. Blend until smooth. This will make a thick biscuit like mixture.

3. Spoon the mixture into a piping bag with a large round nozzle, and pipe into about 8 or 10 small, heaped circular cookies.  Add into the oven and cook for about 8-10 minutes. When the cookies have cooked and cracked slightly on the top, remove them from the oven and set aside to cool.

5. Now, make the filling. Add all of the filling ingredients into a blender/food processor and blend until a smooth, fudgy/ganache consistency has formed.

6. Scoop the mixture into a piping bag with a large nozzle. Get 2 cookies per whoopee pie and pipe a generous amount of filling onto the bottom of one of the cookies. Then, press onto the second cookie, sandwiching them together. Repeat this until you have used all of the cookies to make all of your whoopie pies. Then eat and indulge!
