Happy Sweet Potato Week! Did you know that it’s an international time to celebrate Sweet Potatoes from the 1st-13th April? How amazing is that? It gives me even more excitement to eat them over this time of the year! Sweet potatoes are so healthy and delicious – so I absolutely love eating them. They’re so versatile, and I love making classic dishes with them – as well as using them to create recipes that are more adventurous.

For this celebration, I decided to create three special sweet potato recipes to show you just how great a food they are. I’ll be sharing them all over the next few days, all the way up to the end of International Sweet Potato Week – so you can make sure you have enough recipes to enjoy them over the whole course of the celebration.

So, for my first recipe – I decided to make a classic dish; mashed sweet potato. I absolutely love mashed potato, and there’s something really special about one that’s made with sweet potato. It has a lighter texture, and such a beautiful flavour. For this mashed recipe, I combined the potatoes with garlic, dairy free butter, nutritional yeast flakes, almond milk, salt, pepper, and chilli. This gave the dish a real depth of flavour, and great smooth, creamy texture.

creamy mashed sweet potato

serves 2


600g sweet potatoes

1/4 cup (60ml) almond milk

4 tbsp non-dairy buttery spread

4 tbsp nutritional yeast flakes

1-2 cloves garlic, crushed

1/2 tsp salt

pinch chilli powder

freshly ground black pepper, to taste



  1. Firstly, peel the potatoes and chop them into small cubes. Place a pan onto a medium-high heat, add water about half way and bring it to a boil. Add in the potatoes and cook them for about 10 minutes so, until they are soft.
  2. While the potatoes cook, add the almond milk, dairy-free spread, yeast flakes, garlic, salt, chilli powder and pepper into a large mixing bowl and set aside.
  3. When the potatoes have cooked, remove them from the heat and drain. Then, add the potatoes into the mixing bowl. Using a potato masher, mash all of the ingredients together until the mixture is completely smooth.
  4. Lastly, scoop the finished mashed potato mixture into a bowl, or onto plates to serve.

I love nutritional yeast, it’s soooo tasty.
