coconut apricot granola

I’ve really started to enjoy making my own granola at home. It’s so easy to do, and it’s fun to play around with different flavour combinations. I use coconut oil in a lot of my recipes, as it gives the perfect tropical taste. As the weather gets warmer, it seemed fitting to create a recipe with a tropical twist, so I thought I’d create a granola with coconut oil. Granola makes a really simple breakfast dish that you can prepare ahead of time, and this recipe would be perfect to enjoy for breakfast under the warmth of the sunshine!

For sweetness, I used a combination of rice syrup and stevia for a mild and mellow taste. I recently discovered a liquid stevia by Sweet Solutions – and it’s honestly amazing! I hadn’t really used liquid stevia much before so I couldn’t wait to try it. Just a few drops later and I was instantly hooked! It was amazing how little was needed to give the granola just the right taste. Lastly, I swirled in some chopped dried apricots for a rich fruitiness. Light and delicious, this recipe is definitely my kind of dish to start my day with, so I hope you like it!


coconut apricot granola

serves about 6


2 cups (200g) rolled oats

2 tbsp coconut oil – I used Coconut Merchant

2 tbsp rice syrup

1/4 cup (25g) desiccated coconut – I used Coconut Merchant

1/4 cup (50g) chopped dried apricots

liquid stevia, to taste (I used about 7 drops)

vanilla, to taste




1. Firstly, place the coconut oil into a pan and onto a low heat to melt. Then, add it into a large mixing bowl with the oats, rice syrup, vanilla and stevia . Stir all together until sticky and well mixed.

2. Next, pour the granola mixture evenly onto a baking tray lined with baking parchment. Add the granola into the oven to cook for about 10-12 minutes until golden. After each 5 minutes has passed, remove from the oven and stir the mixture to avoid burning. (The overall length of time depends on how crunchy you like your granola, I cook mine for 10 minutes).

3. When the granola has cooked, remove from the oven and into a mixing bowl. Then, stir in the desiccated coconut and apricots until evenly mixed throughout. Lastly, either pour into a bowl to serve, or into an airtight container to store away for later.
