Oh my goodness, this recipe has been a complete life changer for me. I know it sounds extreme, but you know how much I love chocolate.. I struggle to go a day without it. So, when I created this recipe, and found a whole new, incredibly easy way to enjoy chocolate, it felt like a miracle had happened. I had no idea making chocolate truffles could be so easy!
Above all other chocolatey things, truffles have to be my favourite thing to eat. Their soft, melt in the mouth texture, and deep, decadent flavour, makes my mouth water just thinking about them. I can easily eat an entire batch of truffles in five minutes. Nothing compares to them.
Recently, I received a new and incredible product to try from Coconut Merchant. I’ve been using their ingredients for almost two years now, and they really do make the best coconut products. They released their new Coco Amor spread, a rich, gooey, caramel spread made from coconut sugar and coconut milk recently, and it’s honestly amazing – I can eat a whole jar of it on its own. It’s that addictive. And, as I was enjoying it by the spoonful the other day, I decided to add some cocoa powder into the jar and see what happened.
As I carefully mixed the cocoa into the caramelly mixture, I noticed its consistency change into a smooth, truffle texture within seconds. Then, as I took a scoopful out of the jar to try, I tasted the most simple, delicious chocolate truffle mixture I had ever tried. It was so good. So, I quickly scooped the mixture into a bowl, and left it in the fridge for a few hours to set. Then, when the mixture had hardened, I scooped it into balls, rolled them in cocoa and enjoyed them as truffles. It was truly amazing.
Ever since that moment, I’ve been making lots and lots of truffles using just some cocoa powder, Coco Amor and occasionally a pinch of salt, and developed it into a recipe. They’re just so easy to make, and within a short amount of time, using very little effort, I have an entire plate of rich, luxurious truffles to enjoy all by myself. It’s so heavenly! Now, I can easily enjoy chocolate truffles on a daily basis. I don’t think life can get much better than that! I hope you enjoy the recipe!
two ingredient chocolate truffles
makes about 12-14 small truffles
1/2 cup (145g) Coconut Merchant Coco Amor Spread
1/4 cup (30g) cocoa powder, and extra to dust the truffles
pinch salt – optional
- Add the coco amor spread into a bowl, followed by the cocoa powder and salt. Then, using a spoon or miniature whisk, stir the mixture together until completely mixed in and smooth. Then, transfer the bowl into the fridge and leave to set for about 2 hours until firm.
- When the truffles have set, remove them from the fridge. Take a small spoonful of the mixture and press it into a ball shape. Then, dip the truffle in some cocoa powder to coat it. Repeat this until all of the truffle mixture has been used up. Then, eat them or store them in the fridge to keep cool.
