three cheese sweet potato fries

After chocolate, my next favourite indulgence is vegan cheese. I always love eating it, and luckily for me there’s such an abundance of delicious vegan cheese to buy throughout the UK. One brand of vegan cheese that I particularly enjoy, is Violife. Their extensive range of beautifully packaged products carries every variety, flavour and texture of cheese you could possibly desire. From halloumi to mozzarella, Violife have you covered.

One of my definite cheese weaknesses has to be sauce. I love love love whipping up a cheesy creamy sauce to serve with some fries and snack on them in the evening. They’re just one of those combinations that you can’t stop eating. I decided that for this recipe post, I would whip up a simple cheesy sauce to serve with some sweet potato fries, so that you could try one of my favourite snacks for yourself at home.

For this sauce, I mixed three of Violife‘s cheeses: Smoked, Mozzarella and Creamy Spread. Together, these three cheeses combine a delicious smoky flavour, with the stretchiness of mozzarella and richness of the creamy spread. I then added a few extra ingredients to boost the indulgence of the sauce, and simply melted them together in a pan until they were ready to drizzle on top of the sweet potato. Delicious!

serves 2-3

ingredients

for the fries:

685g sweet potato

drizzle of oil

salt + pepper to taste

 

for the cheese sauce:

3 tbsp oat cream
1 tbsp nutritional yeast
salt and pepper, to taste

method

PREHEAT OVEN TO 200 C / 392 F

  1. Firstly, peel and slice your sweet potatoes into strips, like fries. Then, add them onto a baking tray, drizzle with some oil – I used vegetable oil, salt and pepper. Add them into the oven and cook them for around 25 minutes, until soft inside and cooked through.
  2. When the fries have about 10 minutes left to cook, make the cheese sauce. Add the oat cream, creamy spread, smoked cheese, mozzarella shreds, nutritional yeast, salt and pepper into a medium sized pan, and onto a medium-low heat.
  3. Stir all of the ingredients together for about 10 minutes, until melted and the sauce begins to become stretchy like cheese (when you stir it, it may appear lumpy at times – but just keep stirring it, as it’s not actually clumpy).
  4. The sauce and fries should both be ready at the same time. So when the fries are cooked, remove them from the oven and place them onto a plate. Then, cover them with the cheese sauce and serve.
