Today, I’m sharing a recipe with you for one of my absolute favourite foods – nachos! I love everything about them; their texture, flavour, ingredients, and most importantly, how easy they are to make. All that’s needed is some time to prepare their ingredients before you bake them in a dish for no more than 10 minutes. It’s amazing! They’re so simple, and they’re perfect for when you have little time to make something, but you still want to eat a delicious, filling meal.

I decided to make this recipe after one of my favourite vegan brands, Vegusto, sent me one of their starter packs to try which contained a variety of their different products. I am absolutely obsessed with their cheeses, so as soon as I saw them in my amazing starter pack, I knew I had to make a cheesy recipe! I’d been wanting to make a nacho recipe for my blog for a while now, so I knew that this was the perfect opportunity for me to do so.

For the recipe, I piled up layers and layers of different ingredients onto some tortilla chips, to really smother them with flavours. In my opinion, nachos have to be completely covered with toppings, so I made sure there were lots in this dish!!! For the toppings, I used a mixture of, avocado, a spicy, rich tomato sauce made with Cirio’s chopped tomatoes and tomato puree, red pepper, onion, tomato and Vegusto Melty and Aromatic Cheeses. These toppings added lots of different tastes to the recipe, and these two cheeses were perfect as they have a really good flavour, and the melty has an amazing, soft texture.

The main effort needed to make the dish is just the preparation – which still doesn’t take too much time. All you need to to is blend the sauce, chop the vegetables, and mash the avocado. Then, you just have to layer everything together and bake the nachos for around 5-10 minutes until they’re heated through! It’s so simple, and it’s one of my favourite recipes to make during the week. I hope you enjoy them!

ingredients

for the sauce:

1/2 cup (125ml) chopped tomatoes – I used Cirio

3 tbsp tomato puree – I used Cirio

1 tbsp water

1 clove garlic

2 tsp smoked paprika

1/4 tsp chilli powder

1/4 tsp ground cumin

1/4 tsp salt

freshly ground black pepper, to taste

 

for the avocado:

1 avocado

1 tbsp freshly squeezed lemon juice

1 clove garlic, crushed

pinch salt

freshly ground black pepper, to taste

 

for the vegetables:

1 onion

2 tomatoes

1/2 red pepper

 

for the nachos:

100g corn tortilla chips

Vegusto melty cheese, amount to taste

Vegusto aromatic cheese, amount to taste

 

method

PREHEAT YOUR OVEN TO 180C / 356 F

  1. Firstly, peel your onion and then finely chop it, followed by the tomatoes and red pepper. Set them aside until later. When this is done, make the tomato sauce. Add the chopped tomatoes, tomato puree, water, garlic, paprika, chilli, cumin, salt and pepper into a small blender – I used my NutriBullet, and blend until smooth. Then, set it aside.
  2. Next, slice the avocado into two and remove the skin. Then, place it into a bowl with the lemon, garlic, salt and pepper, and mash it until fairly smooth, using a fork.
  3. When all of these steps are done, assemble the nachos. Place half of the tortilla chips into a small heat proof dish, and top them with half of the tomato sauce, chopped vegetables and avocado. Then, generously grate a mixture of the Vegusto Melty and Aromatic cheeses on top. Then, top with the remaining half of the tortilla chips, sauce, vegetables, avocado and another generous amount of cheese.
  4. When the nachos are ready to cook, move them into the oven and bake them for 5-10 minutes until they have heated through. Then, remove them from the oven and serve.
