So, the festive season is upon us – which means endless indulgence in all of my favourite foods. My childhood love was always mince pies – and I would literally plough through a whole packet of them in one go. Since then, I’ve tried to get creative and experiment with different ways to enjoy the mince pie classic – so I can keep on eating them, again and again. This year, I decided to share my latest – and now favourite re-creation of them.

For this recipe, I created a mince pie cookie sandwich. I layered some mince pie filling between two ginger cookies, and topped them with a cinnamon cacao drizzle. It makes such a delicious treat with a nice change for when you want to try an alternative to the classic mince pie.

makes 4


for the cookies:

doves free-from ginger cookies

for the filling:

4 spoonfuls meridian mince pie filling

for the cinnamon-cacao drizzle:

2 tbsp liquid coconut oil – I used coconut merchant

2 tbsp cacao powder

2 tbsp vegan honey alternative – I used coconut merchant

1/8 tsp cinnamon – I used schwartz



  1. Firstly, make the drizzle. Add the coconut oil, cacao powder, vegan honey and cinnamon into a bowl, and stir together until well mixed and smooth. Then, set aside.
  2. Next, make the cookie sandwiches. Take two doves cookies. Take a spoonful of the mince pie filling, and place it onto one of the cookies. Then, top with the other cookie to make a sandwich. Repeat this three times, until you’ve made four cookie sandwiches.
  3. Lastly, get the cacao cinnamon drizzle, and spoon it on top of the cookie sandwiches to serve.
