I don’t know how, but I seemed to have forgotten about bircher muesli. I only had it a few times when I was younger, but I remember really enjoying it when I did. Yesterday, I had a brainwave. I was just thinking about different recipes I could make for breakfast. It’s so easy to get caught up with time, that you end up preparing the same breakfast every day. Without noticing, you end up dull and tired of a meal you used to appreciate. Over time, I’ve realised that when it comes to breakfast, variation is key. It’s such an important part of your day, so it’s essential that you enjoy it. Of course, it’s important that it’s healthy too! I used almond milk with my oats, and stirred in grated apple and pear alongside a lime and orange that I juiced. I loved the freshness that the citrus flavours add to this dish, as well as the subtle sweetness! For added texture, I also added flaked coconut, and then topped with almonds and blueberries to serve.
1 cup (85g) oats
1 1/2 cup (375ml) almond milk
juice 1 large orange
juice 1/2 lime
1 pear (100g)
1 apple (180g)
1/2 cup (20g) flaked coconut
vanilla, to taste
1. Firstly, get a large mixing bowl. Grate in your apple and pear. Juice your lime and orange, and then also add into the mixing bowl.
2. Pour in your oats, coconut flakes, and then top with almond milk and some vanilla to taste. I like mine fairly liquid, so if you like yours thicker, I would suggest reducing either the almond milk or orange juice. Stir all together, and move into the fridge to rest overnight.
3. In the morning, your oats should have plumped, and liquid reduced. Spoon into bowls, and top with what you like to serve. Delicious!
