beetroot, carrot & apple juice

I’m on a bit of a juice kick at the moment. I normally enjoy just eating fruit and vegetables whole, but I saw my juicer sat in the corner of a cupboard the other day, and thought I ought to start using it again – instead of leaving it to collect dust. I’d actually forgotten just how fun juicing is! I love to see the vibrant colours pouring out from within the vegetables – especially with this juice. We’ve all had that stained hand look after chopping up some beetroot, the bright reddish purple colour is something that can stick to your skin for hours. However, it does make the perfect look for a juice. I combined the beetroot with apples and carrots to create a beautifully deep red drink. It not only tastes sweet and delicious, but also leaves you with that amazing healthy buzz after drinking it.

 

beetroot, carrot & apple juice

serves 2

ingredients

3 apples (400g)

2 raw beetroots (220g)

3 carrots (225g)

2 tbsp freshly squeezed lemon juice

 

method

  1. Add the solid ingredients one at a time into your juicer, and then collect the juice into a jug. When this is done, add in the lemon juice, and stir all of the ingredients together until well mixed. Then, pour into glasses and serve.
