Recently, I was sent some of Alpro’s new ‘Go On’ Plain Yogurt pots to try. I’m a huge fan of Alpro’s products, and especially their yogurts, so as soon as I found out about their new, thicker, creamy yogurts, I couldn’t wait to try them! I tasted them as soon as they arrived, and their texture is amazing – sooo smooth and creamy!
After trying it, I decided to use the yogurt to make a dessert recipe. One of my favourite things to bake are flapjacks – as you can tell from my banoffee flapjacks and raspberry flapjack pudding recipes! So for this dish, I decided to merge my love for those two dishes together, and create a banana flapjack pudding recipe.
It’s such an easy recipe to make, as you just mash some bananas and mix them with all of the other ingredients. Then, simply pour the mixture into a dish and bake it for 35 minutes. When it has baked, remove it from the oven and serve! It’s the perfect speedy dessert or decadent breakfast that’s ready to eat in no time!
I hope you enjoy the recipe!
banana flapjack pudding
serves about 4
1 1/2 cup (140g) porridge oats
250g peeled ripe banana
1/2 cup (125ml) almond milk
3 tbsp Alpro Go On Plain Yogurt
1/3 cup (80ml) date syrup
2 tbsp coconut oil
PREHEAT YOUR OVEN TO 180 C / 356 F
- Add the banana, almond milk, yogurt, coconut oil and date syrup into a large mixing bowl. Using a fork, roughly mash the banana into the mixture (leaving some of the banana in small chunks). Then, add in the oats, salt and chocolate, and fold them into the mixture.
- Then, pour the mixture into a baking dish – I used a small pudding dish. Top with some extra dark chocolate if desired. Place the flapjack into the oven, and bake for about 35 minutes, until golden.
- When the pudding has baked, remove it from the oven, allow it to cool for a few minutes, then serve while warm, or allow it to cool completely before serving.
